Job Opportunity: Executive Sous Chef
Nanuku Resort Fiji, a multi-award-winning luxury resort, is inviting applications from passionate, caring, and talented individuals to join its team in the following role:

Executive Sous Chef

The successful candidate will be responsible for managing, training, and mentoring the kitchen team, including sous chefs and line cooks, to maintain high performance standards. Key responsibilities include overseeing all aspects of food preparation, ensuring strict adherence to recipes, standards, and quality guidelines, and inspecting all dishes to ensure they meet the resort’s expectations for taste, presentation, and overall quality before service.

The role will also involve managing food inventory, assisting with sourcing ingredients, and implementing procedures to control food costs and minimise waste. The Executive Sous Chef will ensure compliance with health, hygiene, and safety regulations, including HACCP and food safety standards. In addition, they will support the Executive Chef in planning menus, creating new dishes, and developing specials to enhance the guest dining experience. Maintaining clear communication with front-of-house managers and other departments will be essential to ensuring seamless operations.

Applicants should have three to five years’ experience in a resort or hotel environment as a Sous Chef or in a similar leadership role.
