The Fiji Times, 07 October 2017 – LOCAL food is undergoing a renaissance of sorts with traditional Fijian cuisine being reinvented in a contemporary manner and served up at some of the country’s finest restaurants — such as Outrigger Fiji Beach Resort’s award-winning Ivi restaurant.

Outrigger Fiji’s executive chef Shailesh Naidu is the man behind the new twist to Fijian food.

The new spring menu includes rare roasted duck breast with truffle tomatoes, balsamic scallops with chorizo and pear puree and Fijian lovo lamb shank marinated in honey and ginger. Read more…
