For a limited time this November, Chef Pawlowski, Executive Chef of Kimpton Harper Hotel in Fort Worth and recently named “Favourite Chef” by Fort Worth Magazine, will bring the bold and vibrant flavours of Texas to Fiji’s shores, offering guests a unique culinary journey through the tastes of his home state.
Known for his innovative techniques and deep appreciation of Texan cuisine, Chef Pawlowski has crafted a menu that pays homage to the spirit of Texas while celebrating Fiji’s fresh local ingredients. His creations, inspired by his family’s rich culinary heritage and honed through years in acclaimed kitchens including Wolfgang Puck’s establishments, promise a memorable experience for food lovers.
Guests are invited to immerse themselves in a series of unique dining events hosted across both InterContinental Fiji Golf Resort & Spa and Grand Pacific Hotel. Each event will highlight a different aspect of Texas cuisine – from refined multi-course dinners to lively street food pop-ups and unforgettable beachside barbecues, showcasing the soul of Dallas in the heart of the South Pacific.
With exclusive, carefully curated menus, Chef Pawlowski will introduce iconic Texan dishes such as slow-smoked BBQ brisket, Tex-Mex street tacos, and indulgent desserts like Mississippi Mud Pie. - Dallas Street Food Pop-Up (13th November, Kama Lounge & Bar, InterContinental Fiji Golf Resort & Spa): A vibrant street food experience capturing the flavours of Dallas in a casual, lively setting.
- BBQ by the Beach (14th November, Kama Beachfront, InterContinental Fiji Golf Resort & Spa): A relaxed beachside BBQ, featuring Texas-style barbecue classics.
- Dallas Harbour Party (19th November, Na Toba Poolside, Grand Pacific Hotel): A grand Texan BBQ celebration with a beachside carving station, live entertainment, traditional BBQ sides and a Texan Margarita Pop-up Bar in partnership with The Distillery Co. Fiji.
