AUSTRALIAN MASTER BUTCHERY MASTERCLASS – OCT 2 to 5

Bula chefs and industry partners!  I have pleasure in announcing several of our major events are coming up over the next few weeks – so encouraging you to get involved.

NPTC TOURISM FESTIVAL WEEK – SEPT 23 TO 27TH

First up is the CFF’s support of NPTCs inaugural Tourism Festival, a week-long event held at the FNU Nadi campus to drive student interest in our industry, especially to address our current labor shortages. If you are free on any of these days then we’d love to see you pop down to show your support and if you have time, to help judge their student cooking competition.

“YOUNG GUNS IN THE KITCHEN” – SEPT 27TH

This is the gala dinner of the Tourism Festival week at FNU Nadi’s restaurant, and we have gathered some of the industry’s award-winning young chefs, including the three boys who recently returned triumphant from the WACS Global Chefs Challenge. Tickets are $50 from FNU for a 5-course degustation, matching wines from Victoria Wines and Fiji Fashion Week performances.

AUSTRALIAN MASTER BUTCHERY MASTERCLASS – OCT 2 to 5

Leylands Limited with the support of the CFF will be conducting a free, one-day Master Butcher Classes with the master butcher and trainer Stan Cornish from Australia.  Each class will start at 8:30am and finish at around 4:30pm. This is the first of the CFF certified masterclass program aimed at local chefs who are passionate to bridge the knowledge gap in their training.

  • How to make Sausages
  • How to sharpen knifes
